Veg Gravy Recipe

Ingredients for paste:
1. Cashew (काजू) - 20 pieces
2. Melon Seeds (खरबूज-तरबूज़ बीज) - 1 small bowl
3. Water (पानी) - as required
4. Ice cubes (बर्फ के टुकड़े) - as required
5. Ginger (अदरक) - 50-60 grams
6. Garlic (लहसुन) - 50-60 grams
7. Oil (तेल) - 1 big serving spoon
8. Onion (प्याज) - 16 pieces/1 kg
9. Tomatoes (टमाटर) - 8 pieces
10. Green chili (हरी मिर्च) - 4 chilies

FOR GRAVY:
1. Oil (तेल) - 2 serving spoons
2. Bay leaf (तेज पत्ता) - 2
3 Small cardamom (छोटी इलायची) - 5
4. Cinnamon (दाल चीनी) - 2
5. Cloves (लौंग) - 6-7 pieces
6. Black cardamom (बड़ी इलायची) - 1
7. Cumin seeds (जीरा) - 1 tsp
8. Ginger Garlic Paste (अदरक लहसुन पेस्ट)
9. Turmeric powder (हल्दी पाउडर) - 1 tsp
10. Red chili powder (लाल मिर्च पाउडर) - 1 tsp
11. Tomato Paste (टमाटर पेस्ट)
12. Salt (नमक) - 1 tsp
13. Onion paste (प्याज का पेस्ट)
14. Coriander powder (धनिया पाउडर) - 2 tsp
15. Roasted Cumin Powder (भुना जीरा पाउडर) - 1 tsp
16. Sugar (चीनी) - 2 tsp
17. Cashew paste (काजू पेस्ट)

How to make Veg Gravy Recipe

1. Boil some Cashew Nuts and Melon Seeds for 2-3 mins and then after cooling it down, grind it and make a paste. Use Ice Cube while grinding it.

2. Chop some Onions thickly and saute it and keep it for cooling down and grind it to make its paste. While grinding the Onions, use some Ice Cubes.

3. Chop some Tomatoes and Green Chilies and grind them as well.

4. In a pan, put some Oil, Bay Leaves, Cardamoms, Cinnamon Sticks, Cloves, Big Cardamom, some Cumin Seeds and some Ginger and Garlic Paste in it. Cook it properly and then take out the Bay Leaves from it.

5. Turn the flame slow and put some Turmeric Powder, Red Chili Powder and then put the Tomato paste and put some Salt in it. Cover it and cook it properly then put the Onion paste in it and cook it as well.

6. After then, put some Coriander Powder, Cumin Powder, Sugar and the paste of Cashew Nuts and Melon Seeds in it.

7. Cook the gravy properly till it releases the fat. In this way, Gravy will get ready and you can store it for long time by keeping it in fridge and you can make as many as dishes you like from this very useful Gravy.
